It’s almost December and we’re in the middle of finalizing our plans for Christmas. Part of the planning includes what to prepare for our Noche Buena, of course!
Our family loves pasta and every special occasion includes at least one pasta dish. So, I was trying to think of a pasta recipe that I’ve never done before.
I gathered inspiration from what we have in our pantry and got a great idea upon seeing our stock of Jolly products, including Jolly Cream of Mushroom, Jolly Green Peas and Jolly Mushrooms. I thought “Wouldn’t it be nice to have them all together in one pasta dish?”.
And so the idea for the Jolly Creamy Beef Stew with Mushrooms was born! I chose this dish because we love the combo of beef, mushrooms, red wine and pasta. But I wanted to #MakeItJolly by adding Jolly Cream of Mushrooms to it as well as other Jolly products.

- 3/4 k Beef Sirloin cut into strips
- 2 TB Flour
- 4 TB Butter
- 2 TB olive oil
- 2 pcs Shallot medium, minced
- 3 cloves garlic minced
- 1 pc Carrot cubed
- 1 can Jolly Green Peas
- 2 cans Jolly Mushrooms, Whole
- 1/2 cup Red Wine
- 2 cups Beef Stock
- 1 pc Beef Cubes
- 1 can Jolly Cream of Mushroom
- Salt and Pepper to taste
- Thyme to taste
- 500 grams Doña Elena Fusili Pasta
- Cook pasta as directed. Drain. Pour a little olive oil and set aside.
- Cook the meat in the pressure cooker. When cooked, put the meat on a plate and sprinkle over with flour. Toss to coat. Keep the beef stock and set it aside.
- Melt butter with olive oil in a pot. Sear meat over high heat in batches. Remove when brown and set aside.
- On the same pot, saute shallots and garlic for 2 minutes over medium-low heat. Add the carrots and cook for 2 minutes. Add peas and mushrooms and cook for another 2 minutes. Pour in wine and beef stock. Add beef cubes if needed. Then add salt and pepper to taste. Bring to a boil.
- Add the meat back into the pot and add thyme. Cover and simmer for 30 minutes.
- Add Jolly Cream of Mushroom and allow to cook and thicken for 10 minutes. Turn off heat and let the stew sit for 15 minutes before serving.
Great recipe. I think I’ll try this in the future. =) I love mushrooms. =)
